I made this porridge idea this morning with pretty much the only ingredients left in my cupboard. It is creamy, delicious & the toppings go perfectly. The baobab powder makes it taste really sweet at the same time as cutting down on refined sugars. The ground almonds will provide you will essential fats as well as sustainable energy throughout the morning.
They are also an amazing source of vitamin E, a known antioxidant for cell protection against free radicals in the body. The oats themselves will provide you with soluble fibre intake and a slow energy release to keep your blood sugar stable throughout the morning. Baobab powder is a known ‘superfood’ that I use on occasion to add sweetness to my recipes without added sugar. I hate using the term ‘superfood’ as it refers to a minority of foods with apparent ‘superpowers’ however forgets about all the nutritious everyday foods out there that don’t get enough credit.
Saying that I don’t let this put me off purchasing some of these powders to boost my nutrient intake especially in the winter months. If you buy in bulk and use them sparingly they can be of benefit to maintaining a healthy lifestyle & making food taste delicious. Baobab powder acts as a prebiotic and is packed with vitamin C and potassium, supposedly 4 x that of a banana. However it has very little evidence based research surrounding the food.
- 1/2 cup Oats, GF is coeliac, sensitivity.
- 1/4 cup ground almond
- 1 tbsp baobab powder
- 1/4 cup coconut milk
- 3/4 cup almond milk
- Handful blueberries.
- Handful hazelnuts
- Handful mixed seeds.
- Place oats, ground almond and baobab powder into a pan with the milk substitutes.
- Heat on medium heat until creamy and all milk is mixed with the oats and almond (approx 4-5 minutes).
- Pulse hazelnuts in a food processor until they are partly crushed.
- Pour porridge into bowl.
- Top with the blueberries, crushed hazelnuts and seeds.
