Today I had a day off university & working which I was meant to spend revising but I got a bit preoccupied in the kitchen instead, whoops! Despite burning my hand yet again from getting too impatient to take the brownies out of the oven (I’m seriously accident prone lately) I absolutely loved getting creative with recipes!
These brownie bites have some pretty unusual ingredients in but they go so well together I promise, they are seriously addictive. They are gluten and dairy free but unfortunately are not nut free as the base of the brownie bites is mostly almonds.
They are full of fibre, which will keep you feeling full & will help with the health of your digestive tract. The ingredients used are packed full with nutrients including vitamin E from the almonds which is known to have antioxidant properties, which research has shown may be protective of heart disease and cancer.
The brownie bites also contain large amounts of plant based protein which as I’m sure you know is essential for the growth, repair and maintenance in every cell of your body. Plant based protein alternatives such as nuts and seeds are a great source of protein and help to reach the guideline daily amounts, especially if you are vegetarian/vegan.
100g Ground almonds
100g mixed seeds
3 tbsp raw cacao
3 tbsp almond butter
2 tbsp maple syrup
200g drained canned chickpeas
250g pitted and chopped dates (deglet nour or medjool dates will work great)
Mix all ingredients in a food processor until fully mixed and start to stick together.
Remove and shape with your hands into square bites.
Place on a baking tray lined with baking paper.
Oven cook for 20 mins at 170-180 degrees. Let cool and enjoy!
