As promised on my instagram profile I am going to share with you all my recipe for my Chinese style Miso Chicken. Miso is one of the world’s healthiest foods and is full of fermented good bacteria to maintain a healthy gut. It also tastes absolutely amazing when combined with the right foods.
I created this recipe last night and it turned out even better than expected, a massive thumbs up from the other half too which is always a bonus. This is a protein rich meal which would make the most perfect post workout dinner as its also super quick to make.
2 medium sized good quality chicken breasts
2 finely chopped garlic cloves
handful frozen chopped onions
handful frozen mixed mushrooms
Handful frozen very fine whole green beans
For the sauce:
two tbsps peanut butter
one tbsp miso paste
one teaspoon maple syrup
quarter teaspoon ground cinnamon
Sprinkle sea salt
Heat a splash of olive oil in a medium sized frying pan .
Add the chopped garlic cloves and onion and fry for 3-4 minutes.
Chop chicken breasts into medium sized pieces.
Cook over medium heat until cooked through.
Add the mushrooms and whole green beans and fry until chicken is browned and the mushrooms and beans are thoroughly cooked.
Combine the sauce ingredients in a separate bowl and add to the frying pan.
Stir until combined and cook for another 5-10 minutes until all ingredients are piping hot.
Serve with a side of rice or corgetti as preferred.
