Almond energy balls

Hi everyone,

Ive been a little quite on here lately as life just sort of starts to take over with work commitments etc but this weekend I want to share a special recipe with you guys. I am seriously addicted to these energy balls. I have made them about three times already this week as whenever I make them they tend to go the same night. They are so addictive but so so good for you. As always they are super simple to make and require only five ingredients. Of course you can top with chocolate or add raw cocoa as you wish if you want that chocolate fix too but I’m going to share the most basic form of this recipe with you.

They are perfect for any time of the day to give you that much needed boost and I promise they do not disappoint on taste.

 

You will need:

  • one cup ground almonds
  • 16g chia seeds
  • 3 tbsp water
  • 2 tbsp coconut oil
  • handful chopped deglet noor dates

 

To make:

  1. Firstly mix the ground almond, chia seeds and water in a food processor, pulse until mixed. Then add the coconut oil Β and dates. Pulse until mixed into a sticky paste.
  2. With your hands separate the mixture and roll into small/medium sized balls as you wish.
  3. Place on baking tray and leave to set overnight in the fridge or for a more speedy process place in the freezer for an hour or two.
