This granola is so nutty & moreish! I’ve gone through about three bowls with almond milk already this morning.. not to mention the bowl I had coming in from a night out with a friend last night. It’s so deliciously chewy and so good for you! It is gluten, dairy & refined sugar free. The raw cocoa provides a mood boost in the morning for the long day ahead and the oats are a low GI food to keep you full & satisfied with a slow release of energy.
You will need:
two cups gluten free oats (or normal oats if not celiac, gluten intolerance)
100g chopped dried dates
two tbsp raw cacao
150g unsalted mixed nuts (I used cashews, almonds, pecans and hazelnuts)
four tbsp coconut oil
three tbsp maple syrup
Preparation time:10 minutes.
Start with preparing your mixed nuts by placing in food processor and pulse until nuts are in broken small pieces.
Mix all dry ingredients together in a large mixing bowl. This includes the cocoa, oats, dates and nuts.
Then heat coconut oil on the hob until melted.
Stir the coconut oil through the dry ingredients and then add the maple syrup.
Stir until all mixed together then place on a baking tray with baking paper to cover bottom of tray.
Cook on 160 degrees for 25-30 minutes. Check to ensure golden and then remove from oven.
Leave to cool and place in large storage container to keep.
